Mine is a driver but it is painted in the wells. I figured when it got beat up then I would do something different.

That crossed my mind also. Eventually it will have to be done either way. I can just see me rounding a corner and VA DOT has just layed down fresh tar and gravels. Their to cheap to lay down payment on our back roads. I can just hear the gravels beating the grap out of the fenders. Ok done scared myself , going to talk to the paint guy tomorrow see what he can get.

Most undercoating is a petroleum base. Once on it is a pain in the A-- to get off if you need to do repairs later. Plus a mess to take off. On some of the fenders I've been working on I had to take a torch to get a majority of it off.
If you want good protection from stone chips and still want the color to show through I suggest chip guard. But it still a pain to take off but not as messy and cleans up better for painting.
As for the road being tared and chipped. I think I would be more worried about the nose section and the rest of the outside body paint being damaged. I'd try to avoid the road till it has been well traveled and packed down. By then the road crew should just be ready to redo it it again.
It's fun having a car pass you and then watch the chips fly off their tires as they floor it as they pull in front of you.

I got tarred the first season after I put the car on the road. I used Zip car wash and a cup of kerosene to wash under the fenders. Came out clean as a whistle.

N.C. road tarring doesn't care who it gets on. They start as soon as it gets warm and continue all summer.

Just a quick question, did the cars have under seal from new ? I ask as I am sure mine does not have anything. Kind regards,
Mark.
Mark.
Nope. Never.
Do you know why the British don't make computers? They can't figure out how to make them leak oil!
