I'm assuming there's a cable of some sort that hooks up to this switch. Where might I find this cable? Where would the other end be located? If not there, is this cable available?

That looks like the left-most cable control - the heat control. It's cable runs to the heater valve bolted to the passenger side of the head. Cable extended is "off(ish)", cable retracted is "heat" (such as it is).
The one on the right controls the direction of the heat - off(ish), footwells (mostly), or defrost vents.

Thank you Steve. Now I need to locate a cable. None visible near switch or valve / head. Found the part in Moss.
Amazing how some folks will hack up these classic cars. I'm also trying to wire up the head light switch (new)
And the Brake light switch (new). Not good with schematics. Just old fashion digging around. What exactly does the Brake light switch do.
I'm thinking it's for the hand brake. The last picture is just a little detail work. That piece was a bear to get off and put back.

In your second to last photo you show the back side of the dash. On the top of that photo is the brake pressure warning light, what it does is alert you that there's a pressure difference between the two separate systems, which you could feel with your foot too. It has a red light on the front with a 'press to test' button, all it does is test the light bulb function.

On the control mechanism, you'll need to fabricate, or get off another mechanism - the outer cable clamp. The back side of it is shown in Jeff's last pic - the tab fitting through and the bolt fixing it to the mechanism. No doubt that cannot be bought separately from the control. The other part you'll need is the cable "barrel clamp" that fixes the inner cable to the mechanism movement arm. That can be bought separately, or you can get them at bicycle or motorcycle shops.

If you are missing bits and they are unobtanium from the usual suppliers I have had about an 80% success rate on the Buy & Sell forum in terms of as advertised quality. Usually the stuff I buy is cheap and all I do is log the person in my book of people I'm gonna kill when I get terminal cancer...
I troll the Buy & Sell every day or so for interesting impuls buys...
The goal - Reliable summer driver interspersed with mechanical tinkering...
Motto - "Driving fifty in the twisties..."
On Mods - It's your damn car - Do what you want. Haters gonna hate...
On SUVs - Drive your B like a soccer mom is texting her friends about how she wants to kill you...

Btw - re: the brake light. All dual-circuit systems were required by US law to have a light to indicate failure of one of the circuits - that's what that light is for. The reason for the test switch for the bulb is that the law also requires that the operator have some way to verify that the warning bulb was still operable. Most other cars, to this day, test the light when you start the car - flashing it in the start sequence. MG apparently didn't want to add the electronics to do that, hence the "push to test" switch.

I'm thinking it's for the hand brake.

No hand brake light switch or connection for on 1972 model, this is only a test light for brake system. Look in your engine bay on driver side flitch panel. You will find a brake union block,
the plastic switch you see in the photo, (white 'nadger') is the 'business end' of this brake warning light.
Have a look at the schematic, it will be apparent what goes where.
