Fish Fry

Caught a stringer full of pan size catfish Saturday and fried them up last night. Sure were good eating.

Are those the little yellow ones like we call a Bullhead or Chughead? They don't get hardly any bigger than those in the pan and are as tasty as a Red Eared Sunfish which don't get very big either. Both of those little fish have unsurpassed flavors all their own.

Those look good, John and John. JDW - around here the redear sunfish are called shell crackers because the feed mostly on mussells and have two rows of teeth for cracking their shells. The SOuth Carolina state record for that fish, believe it or not, is over 5 pounds. I think about 1-1.5 pounds are the largest I've ever seen and most are smaller than that. Find a bed of those in the spring in shallow water, use an ultralight and bloodworms for bait, and Katie bar the door! Fun. The limit in SC is 30/day. A couple of years ago, my brother, nephew and I went out, launched at 7am, had our limit by 10. Mostly they were like this:

Those are bait size. Where I used to fish, anythiung less thyan 20" had to be returned to the river - by law.

I used to wade shallow gravel bottom creeks and catch Red Ears with a fly rod. I used a tiny hook that I mashed the barb down on and used a tiny piece of green plastic catalpa worm for bate. Those little guys are super aggressive and will hit anything that lands near their bed. I disabled the barb as not to injure the ones I tossed back because they were too small. Very few ever flopped off the hook before I could get a hand on them.

Scott, sounds like a beefeater to me. I like a variety - beef, pork, birds, fish. Fish can be quite good when well-prepared. In fact, I'd usually prefer fish to beef if it's cooked right, and if it's the right kind of fish. You take a blackened grouper or puppy drum and I'll put it up against your fanciest grain or grass-fed beef ct any ole time. Just my 2-cents.

Wyatt, I do fresh salmon on the grille almost every Saturday evenin... grille a filet mignon for the wifey, and I usually have a bite of it, plus my salmon. Add fresh corn on the cob in summer, or baked potato in winter and a tossed salad, and I'm set for the evening.
