None of my MGs have after-market relays. Any thoughts plus or minus for this six-relay set that should accommodate headlights, fog/driving lights, AC, anything else I could imagine?

That looks like a good relay/fuse box and self-contained. I'd suggest you use the 6 relays as follows:
1- High Beam
2- Low Beam
3- Horn
4- DRL/Fog/Driving lights
5- Electric cooling fan (if you have one or plan on installing one)
6- Spare
It depends on the location where you plan on installing the box, but if it is close to the fuse box, you may use 2 of the relays as ignition relays to take the load off your ignition key.
I did something similar but using an OEM relay box picked off the auto junk yard. Had I found the one you mentioned here, I would have used it. Note the two separate ignition relays near the fuse box. Here's some photos.
